Chocolate Peanut Butter Snowballs with Caramel Drizzle

Ingredients

  • 1 cup creamy peanut butter (not natural style)
  • 2 tablespoons melted butter
  • 1 ½ to 2 cups powdered sugar, sifted
  • 1 teaspoon vanilla extract (optional, for extra flavor)
  • 1 cup semisweet or milk chocolate chips (for coating)
  • 1 teaspoon coconut oil or vegetable oil (to thin the chocolate, optional)
  • Caramel sauce (store-bought or homemade, for drizzle)
  • Sprinkles or crushed peanuts (optional, for garnish)

Instructions

  1. Make the Peanut Butter Mixture
    • In a medium bowl, combine the peanut butter, melted butter, and vanilla extract (if using).
    • Gradually add 1 ½ cups of sifted powdered sugar, mixing well. Add the remaining powdered sugar if needed to reach a firm, moldable dough consistency.
  2. Form the Snowballs
    • Scoop small portions of the peanut butter mixture and roll them into 1-inch balls.
    • Place the balls on a parchment-lined baking sheet. Chill in the refrigerator for at least 30 minutes to firm up.
  3. Prepare the Chocolate Coating
    • In a microwave-safe bowl, melt the chocolate chips with the coconut oil (if using) in 20–30 second intervals, stirring between each interval until smooth.
  4. Dip the Snowballs
    • Using a fork or toothpick, dip each peanut butter ball into the melted chocolate, making sure it is fully coated.
    • Return the coated snowballs to the parchment-lined baking sheet. Let the chocolate set by chilling in the refrigerator for 15–20 minutes.
  5. Drizzle with Caramel
    • Once the chocolate has set, drizzle caramel sauce over each snowball.
    • Optional: Sprinkle crushed peanuts or festive sprinkles on top for extra decoration.
