Ultimate Herb-Crusted Prime Rib Roast

Ingredients

1 prime rib roast (4–6 pounds)

2 tablespoons olive oil

2 tablespoons kosher salt

1 tablespoon freshly ground black pepper

1 tablespoon garlic powder

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme, finely chopped

4 cloves garlic, minced

Instructions

1. Prepare the Roast

Remove the prime rib from the refrigerator 2 hours before cooking to allow it to come to room temperature. Pat the roast dry with paper towels.

2. Season Generously

In a small bowl, combine the salt, pepper, garlic powder, rosemary, thyme, minced garlic, and olive oil. Rub the mixture evenly over the entire roast.

3. Roast to Perfection

Preheat your oven to 450°F (230°C).

Place the roast on a rack in a roasting pan, fat side up. Roast for 20 minutes to develop a beautiful crust.

Reduce the oven temperature to 325°F (165°C) and continue roasting until the desired internal temperature is reached:

Rare: 120–125°F (49–52°C)

Medium-Rare: 130–135°F (54–57°C)

Medium: 140–145°F (60–63°C)

4. Rest the Meat

Remove the roast from the oven and loosely tent it with foil. Let it rest for 20–30 minutes before slicing. This allows the juices to redistribute throughout the meat.

5. Slice and Serve

Carve into thick slices and serve with horseradish sauce, au jus, roasted vegetables, mashed potatoes, or your favorite holiday side dishes.

Use a meat thermometer for the most accurate results.

Prime rib will continue cooking slightly while resting.
