🛒 Ingredients

 

– 2 pounds (900 g) boneless, skinless chicken thighs

– 4 medium carrots, sliced

– 3 medium potatoes, peeled and diced

– 1 medium onion, chopped

– 3 garlic cloves, minced

– 4 cups chicken broth

– 1 cup frozen peas

– 2 tablespoons tomato paste

– 1 tablespoon Worcestershire sauce

– 1 teaspoon dried thyme

– 1 teaspoon dried rosemary

– 1 teaspoon smoked paprika (optional, for extra flavor)

– 1 bay leaf

– Salt and freshly ground black pepper, to taste

– 2 tablespoons chopped fresh parsley, for garnish

 

 

 

 

Optional Thickener

 

– 2 tablespoons cornstarch mixed with 2 tablespoons cold water (for a thicker stew)

 

Instructions

 

1. Arrange the chicken thighs in the bottom of your slow cooker.

2. Add the carrots, potatoes, onion, and garlic over the chicken.

3. In a bowl, whisk together the chicken broth, tomato paste, Worcestershire sauce, thyme, rosemary, smoked paprika, salt, and pepper. Pour over the vegetables and chicken. Add the bay leaf.

4. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until the chicken is tender and easily shreds.

5. Remove the bay leaf. Shred the chicken with two forks, then return it to the slow cooker.

6. Stir in the frozen peas during the last 30 minutes of cooking.

7. If you prefer a thicker stew, stir in the cornstarch slurry and cook for another 10–15 minutes until slightly thickened.

8. Taste and adjust the seasoning if needed.

9. Ladle into bowls and garnish with fresh parsley.
