Ingredients
For the Buttery Tart Shells
1½ cups all-purpose flour
½ cup powdered sugar
¼ teaspoon salt
½ cup cold unsalted butter, cubed
1 large egg yolk
2–3 tablespoons ice water
For the Silky Lemon-Lime Curd
3 large eggs
3 large egg yolks
¾ cup granulated sugar
⅓ cup freshly squeezed lemon juice
3 tablespoons freshly squeezed lime juice
1 tablespoon finely grated lemon zest
1 teaspoon finely grated lime zest
6 tablespoons unsalted butter, cubed
Pinch of salt

Powdered sugar, for dusting

Instructions
1. Make the Tart Dough
In a food processor, combine the flour, powdered sugar, and salt. Add the cold butter and pulse until the mixture resembles coarse crumbs.
Add the egg yolk and 2 tablespoons of ice water. Pulse until the dough starts coming together, adding the remaining tablespoon of water only if needed.
Shape the dough into a flat disc, wrap tightly in plastic wrap, and refrigerate for 30 minutes.
2. Prepare the Tart Shells
Preheat the oven to 350°F (175°C) and lightly grease eight mini tartlet pans.
Roll the chilled dough to about ⅛ inch (3 mm) thick. Cut circles slightly larger than the tart pans and gently press them into the bottoms and sides.
Prick the bottoms with a fork and refrigerate the prepared shells for 15 minutes.
Line each shell with parchment paper and fill with pie weights or dried beans. Bake for 12 minutes.
Remove the parchment and weights, then continue baking for 6–8 minutes, or until the pastry is lightly golden. Cool completely.
3. Prepare the Lemon-Lime Curd
In a heatproof bowl, whisk together the eggs, egg yolks, sugar, lemon juice, lime juice, lemon zest, lime zest, and salt.
Set the bowl over a saucepan of gently simmering water (double boiler method), making sure the bowl doesn’t touch the water.
Whisk constantly for 8–10 minutes, until the mixture thickens enough to coat the back of a spoon.
Remove from the heat and whisk in the butter one cube at a time until fully melted and the curd is smooth, glossy, and silky.
4. Assemble the Tartlets
Spoon the warm citrus curd evenly into the cooled tart shells.
Smooth the tops with a spatula or the back of a spoon.
Refrigerate for at least 2 hours, or until the filling is completely set.
5. Garnish & Serve
Lightly dust the edges with powdered sugar.
Decorate with thin lime slices, fresh lemon and lime zest, and a few mint leaves if desired.
Serve chilled for the brightest flavor and the creamiest texture.
