Spaghetti with Spinach & Sun-Dried Tomato Cream Sauce

Bring a touch of Italian comfort to your table with this creamy, flavorful pasta dish. The combination of tender spaghetti, fresh spinach, and tangy sun-dried tomatoes all coated in a rich cream sauce makes it a quick yet elegant meal for any day of the week.

Ingredients

8 oz (225 g) spaghetti

2 cups fresh spinach leaves

½ cup sun-dried tomatoes, chopped

½ cup heavy cream

¼ cup grated Parmesan cheese

2 garlic cloves, finely minced

2 tbsp olive oil

Salt and freshly ground black pepper, to taste

Instructions

1. Cook the pasta: Boil spaghetti in salted water following the package directions until al dente. Drain well and set aside.

2. Sauté the garlic: In a large skillet, warm the olive oil over medium heat. Add the minced garlic and cook for about 30 seconds, or until fragrant.

3. Add the vegetables: Toss in the spinach and chopped sun-dried tomatoes. Stir and cook until the spinach softens and wilts.

4. Make the sauce: Pour in the heavy cream and sprinkle in the Parmesan cheese. Stir gently until the sauce is smooth and warmed through.

5. Combine: Add the cooked spaghetti to the skillet, tossing everything together until the pasta is evenly coated in the creamy sauce.

6. Season and serve: Taste and adjust with salt and black pepper. Serve hot with extra Parmesan on top if desired.
