Pumpkin Cottage Cheese Bake – Creamy, Comforting & Protein-Packed

This pumpkin bake is pure autumn comfort! Creamy, lightly sweet, and packed with protein—it’s like pumpkin pie meets cheesecake, but completely guilt-free. Enjoy it warm for breakfast or chilled as a cozy dessert!

Ingredients (serves 6–8):

  • 2 cups (16 oz) cottage cheese
  • 3 large eggs
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • ½ cup oat flour or almond flour
  • ½ cup maple syrup or brown sugar
  • 2 tsp pumpkin pie spice

 

 

 

Directions:

Step 1 – Preheat the oven
Set oven to 350°F (175°C) and grease or line an 8×8-inch baking dish.

Step 2 – Blend
In a blender or food processor, combine all ingredients until smooth.

Step 3 – Bake
Pour mixture into the prepared dish and bake for 40–45 minutes, or until the center is just set and the edges are lightly golden.

Step 4 – Cool and serve
Let cool for 10–15 minutes before slicing. Serve warm or chilled—delicious either way!

 

 

 

Tip: Top with Greek yogurt, a drizzle of maple syrup, or a sprinkle of chopped pecans for extra flavor.
