Pecan Pie Muffins
Ingredients:
- 1 cup packed light brown sugar
- 1/2 cup all-purpose flour
- 1 cup chopped pecans
- 2 large eggs
- 1/2 cup (1 stick) unsalted butter, melted and slightly cooled
- 1 teaspoon vanilla extract (optional but recommended)
- A pinch of salt (optional)
Instructions:
- Preheat the Oven:
Preheat your oven to 350°F (175°C).
Grease or line a mini muffin tin (makes about 18 mini muffins or 9 regular-sized muffins). - Mix Dry Ingredients:
In a medium bowl, combine brown sugar, flour, chopped pecans, and salt (if using).
Stir until evenly mixed. - Mix Wet Ingredients:
In a separate bowl, lightly beat the eggs.
Stir in the melted butter and vanilla extract. - Combine:
Add the wet ingredients to the dry ingredients.
Stir just until combined—do not overmix. - Fill the Muffin Cups:
Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full. - Bake:
Bake for 18–22 minutes for mini muffins or 25–28 minutes for regular muffins.
They’re done when the tops are set and a toothpick inserted into the center comes out clean. - Cool and Enjoy:
Let the muffins cool in the pan for 5–10 minutes, then remove and transfer to a wire rack to cool completely.
