Creamy Chicken & Carrot Spread — A Hidden Treasure Recipe

Ingredients:

  • 1 cooked chicken breast
  • 2 medium cooked carrots
  • 2 tablespoons cream cheese or ricotta
  • 2 tablespoons mayonnaise (optional, for a creamier texture)
  • 1 garlic clove (optional)
  • Salt and pepper, to taste
  • A drizzle of olive oil or a squeeze of lemon juice for a fresh touch

Directions:

  1. Cook the chicken breast in salted water and season it with herbs. You can boil or steam it.
  2. Boil the carrots until they’re tender but not mushy.
  3. In a food processor or blender, combine the shredded chicken, carrot pieces, cream cheese, mayonnaise (if using), garlic, and a drizzle of olive oil or lemon juice.
  4. Blend until smooth and creamy.
  5. Season with salt and pepper to taste.

 

 

 

Serve chilled with toast, baguette slices, pita bread, or crackers — it’s perfect as a quick snack, appetizer, or light lunch.
