No-Bake Peanut Butter Oat Cups

These irresistible no-bake peanut butter oat cups combine creamy peanut butter, hearty oats, and a luscious chocolate topping. Quick, simple, and perfect as a snack anytime!

 

 

 

Ingredients:

  • 1½ cups peanut butter
  • 1½ cups oat flour (or finely ground rolled oats)
  • ¼ cup maple syrup
  • 1 cup chocolate chips
  • 1 tsp coconut oil (optional)

 

 

 

Instructions:

1. Prepare the Peanut Butter Base:
In a microwave-safe bowl, mix the peanut butter and maple syrup. Microwave for 40–60 seconds until softened, then stir until smooth and fully combined.

2. Add the Oats:
Gradually stir in the oat flour until the mixture forms a thick, moldable dough.

3. Shape the Cups:
Grease a muffin tin or line it with cupcake liners. Evenly divide the peanut butter mixture into the cups, pressing it down firmly with your fingers to shape the base.

4. Make the Chocolate Topping:
In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.

5. Top the Cups:
Pour the melted chocolate over each peanut butter cup and smooth with a spoon. Optionally, sprinkle with flaky salt, mini chocolate chips, or sprinkles for extra flair.

6. Chill to Set:
Refrigerate for 2–3 hours until the chocolate hardens. Once set, remove from the muffin pan and store in an airtight container in the fridge for up to 5 days.
