Healing Vegetable Soup (Stomach-Friendly & Super Healthy!)
This soothing vegetable soup is like medicine for the stomach — gentle, nourishing, and packed with vitamins. I eat it day and night because it’s light, comforting, and absolutely delicious!
Ingredients
- 1 onion, chopped
- 2 tbsp olive oil
- 2 leeks, chopped
- 2 stalks celery, chopped
- 1 carrot, diced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 2 medium potatoes, diced
- 3 cloves garlic, minced
- 1 tomato, chopped (or ½ cup crushed tomatoes)
- 1.5 liters (6 cups) vegetable broth or water
- 1 tsp salt (or to taste)
- ½ tsp black pepper
- 1 tsp paprika
- 1 tsp turmeric (optional but great for digestion)
- ½ tsp dried thyme or oregano
- Handful of parsley, chopped
- Juice of ½ lemon (optional, for freshness)
Instructions
Sauté the Base
- Heat olive oil in a large pot over medium heat.
- Add chopped onion, leeks, and celery.
- Sauté for 5–7 minutes until soft and fragrant.
Add the Veggies
- Add carrot, red pepper, zucchini, and potatoes.
- Stir in the garlic and cook 1–2 minutes.
- Add tomato or crushed tomatoes and mix well.
Season & Simmer
- Pour in the vegetable broth or water.
- Add salt, pepper, paprika, turmeric, and thyme/oregano.
- Bring to a boil, then reduce the heat.
- Cover and simmer 25–30 minutes, until all vegetables are tender.
Finish
- Stir in fresh parsley.
- Add lemon juice if you want a brighter flavor.
- Taste and adjust seasoning.
Serve
Enjoy warm — it’s gentle on the stomach, perfect for detox, digestion, or when you want something light and healing.
