Healing Vegetable Soup (Stomach-Friendly & Super Healthy!)

This soothing vegetable soup is like medicine for the stomach — gentle, nourishing, and packed with vitamins. I eat it day and night because it’s light, comforting, and absolutely delicious!

Ingredients

  • 1 onion, chopped
  • 2 tbsp olive oil
  • 2 leeks, chopped
  • 2 stalks celery, chopped
  • 1 carrot, diced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 2 medium potatoes, diced
  • 3 cloves garlic, minced
  • 1 tomato, chopped (or ½ cup crushed tomatoes)
  • 1.5 liters (6 cups) vegetable broth or water
  • 1 tsp salt (or to taste)
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp turmeric (optional but great for digestion)
  • ½ tsp dried thyme or oregano
  • Handful of parsley, chopped
  • Juice of ½ lemon (optional, for freshness)

Instructions

 Sauté the Base

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, leeks, and celery.
  3. Sauté for 5–7 minutes until soft and fragrant.

 Add the Veggies

  1. Add carrot, red pepper, zucchini, and potatoes.
  2. Stir in the garlic and cook 1–2 minutes.
  3. Add tomato or crushed tomatoes and mix well.

 Season & Simmer

  1. Pour in the vegetable broth or water.
  2. Add salt, pepper, paprika, turmeric, and thyme/oregano.
  3. Bring to a boil, then reduce the heat.
  4. Cover and simmer 25–30 minutes, until all vegetables are tender.

Finish

  1. Stir in fresh parsley.
  2. Add lemon juice if you want a brighter flavor.
  3. Taste and adjust seasoning.

Serve

Enjoy warm — it’s gentle on the stomach, perfect for detox, digestion, or when you want something light and healing.

  • Spinach or kale
  • ½ cup cooked rice or quinoa
  • Chickpeas or lentils for protein
  • Chili flakes if you prefer heat
