Homemade Limoncello
Ingredients
10 large lemons (only the yellow zest, no white pith)
3 cups sugar
4 cups water
1 teaspoon vanilla extract (optional for depth of flavor)

Instructions
1. Prepare the Lemon Zest
Wash the lemons thoroughly.
Use a peeler to remove thin strips of zest, making sure to avoid the bitter white pith.
2. Make the Lemon Infusion
In a large pot, combine the water and lemon zest.
Slowly bring the mixture to a gentle simmer over medium heat.
Let it simmer for 10 minutes, allowing the lemon oils to release into the water.
3. Add the Sugar
Stir in the sugar until it is fully dissolved.
Continue simmering for another 5–7 minutes until the syrup slightly thickens.
4. Flavor & Cool
Remove the pot from heat.
Add the vanilla extract if you’d like a smoother flavor.
Let the mixture cool completely.
5. Strain & Bottle
Strain out the lemon zest using a fine sieve.
Pour the clear lemon syrup into a clean glass bottle or jar.
Refrigerate until cold.

How to Use It
Add a splash to sparkling water for a refreshing lemon drink.
Drizzle over pancakes, cakes, or fruit.
Mix into iced tea or lemonade for extra flavor.
Use in desserts that normally call for limoncello.
