Grinch Green Chili Corn Dip (Crockpot Recipe)

 

 

Ingredients

  • 1 block (8 oz) cream cheese
  • 1 cup sour cream
  • 2 cans southwest corn (drained)
  • 2 small cans diced green chilies
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded Pepper Jack cheese
  • Seasonings to taste:
    • Chili powder
    • “Slap Ya Mama” seasoning (or any Cajun seasoning)
    • Onion powder

Optional Toppings

  • Sliced green onions
  • Cooked, crumbled bacon

Instructions

1. Prepare the Crockpot

Lightly spray the inside of your slow cooker with nonstick spray (optional but helps with cleanup).

2. Add Ingredients

To the Crockpot, add:

  • Cream cheese (cut into cubes for easier melting)
  • Sour cream
  • Southwest corn
  • Green chilies
  • Monterey Jack
  • Pepper Jack
  • Your chosen seasonings

3. Cook

Choose one of these cooking methods:

  • High for 2 hours, stirring occasionally
    or
  • Low for 4 hours, stirring every hour

Cook until everything is fully melted and smooth.

4. Serve

Stir well and taste—add more seasoning if needed.
Top with green onions and bacon if you want extra flavor.

Serve warm with:

  • Tortilla chips
  • Crackers
  • Toasted baguette slices
  • Veggie sticks
