Cool Whip Christmas Cookies

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1 cup Cool Whip, thawed
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • Red and green sprinkles or colored sugar for decoration

Instructions

1. Preheat and Prepare

  • Preheat your oven to 350°F (175°C).
  • Line baking sheets with parchment paper or silicone baking mats.

2. Cream Butter and Sugars

  • In a large bowl, beat the softened butter, granulated sugar, and powdered sugar together until light and fluffy (about 2–3 minutes).

3. Add Cool Whip

  • Mix in the thawed Cool Whip and vanilla extract until smooth and creamy.

4. Make the Dough

  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture.
  • Mix on low speed just until a soft dough forms. (Do not overmix.)

5. Shape and Decorate

  • Scoop tablespoon-sized portions of dough and roll into balls.
  • Roll each ball in red and green sprinkles (or colored sugar) until coated.
  • Place the cookies on the prepared baking sheets about 2 inches apart.

6. Bake

  • Bake for 10–12 minutes.
  • Cookies should remain pale and soft on top; they will not brown much.

7. Cool

  • Allow the cookies to cool on the baking sheet for 5 minutes.
  • Transfer to a wire rack to cool completely.
