Mediterranean Ground Beef Skillet
A simple, one-pan meal loaded with savory ground beef, tender vegetables, and creamy feta — flavorful, balanced, and satisfying.

Serves: 4

Ingredients:

  • 500g ground beef
  • 1 medium zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, sliced
  • 1 small yellow onion, sliced
  • 2 garlic cloves, minced
  • 100g feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • Salt & black pepper, to taste
  • Fresh parsley, chopped (for garnish)

 

 

 

Instructions:

  1. Cook the beef: In a large skillet over medium heat, brown the ground beef. Season with salt, pepper, and oregano. Remove from the skillet and set aside.
  2. Sauté the vegetables: In the same skillet, heat the olive oil. Add the zucchini, red and yellow onions, and garlic. Cook 5–6 minutes until tender and slightly caramelized.
  3. Add tomatoes and beef: Stir in the cherry tomatoes and cook 2–3 minutes until softened. Return the cooked beef to the skillet and combine everything well.
  4. Add feta: Sprinkle crumbled feta over the top and allow it to warm for 1–2 minutes.
  5. Serve: Garnish with fresh parsley. Enjoy warm on its own or with quinoa, couscous, or a side salad.
