No-Bake Coconut Cream Balls 

Deliciously creamy and sweet, these no-bake coconut cream balls are perfect as a snack, dessert, or holiday treat. Soft inside, subtly sweet, and coated in coconut (or white chocolate for an extra indulgence).

Ingredients:

  • 2 cups shredded unsweetened coconut
  • 1 cup sweetened condensed milk
  • 1 tsp vanilla extract
  • 1/2 cup powdered sugar
  • 1/4 tsp salt
  • 1/2 cup white chocolate chips (optional, for coating)
  • Extra shredded coconut, for rolling

Directions:

  1. Mix the Base:
    In a large bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, powdered sugar, and salt. Stir until the mixture is thick and sticky.
  2. Form the Balls:
    Using your hands or a small cookie scoop, shape the mixture into 1-inch balls. Place them on a parchment-lined tray.
  3. Chill:
    Refrigerate the coconut balls for at least 30 minutes to firm up.
  4. Optional Chocolate Coating:
    • Melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
    • Dip each coconut ball into the melted chocolate, then roll in extra shredded coconut.
    • Place back on the parchment-lined tray and refrigerate until the chocolate sets, about 15–20 minutes.
  5. Storage:
    Keep the coconut cream balls in an airtight container in the refrigerator.

 

Tips & Variations:

  • For a creamier texture, chill the mixture overnight before rolling.
  • Add a tropical twist by mixing in finely chopped dried pineapple or mango into the coconut mixture.
  • Serve as a bite-sized treat at parties, or enjoy as a sweet snack anytime.
