No-Bake Coconut Cream Balls
Deliciously creamy and sweet, these no-bake coconut cream balls are perfect as a snack, dessert, or holiday treat. Soft inside, subtly sweet, and coated in coconut (or white chocolate for an extra indulgence).
Ingredients:
- 2 cups shredded unsweetened coconut
- 1 cup sweetened condensed milk
- 1 tsp vanilla extract
- 1/2 cup powdered sugar
- 1/4 tsp salt
- 1/2 cup white chocolate chips (optional, for coating)
- Extra shredded coconut, for rolling
Directions:
- Mix the Base:
In a large bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, powdered sugar, and salt. Stir until the mixture is thick and sticky. - Form the Balls:
Using your hands or a small cookie scoop, shape the mixture into 1-inch balls. Place them on a parchment-lined tray. - Chill:
Refrigerate the coconut balls for at least 30 minutes to firm up. - Optional Chocolate Coating:
- Melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
- Dip each coconut ball into the melted chocolate, then roll in extra shredded coconut.
- Place back on the parchment-lined tray and refrigerate until the chocolate sets, about 15–20 minutes.
- Storage:
Keep the coconut cream balls in an airtight container in the refrigerator.
Tips & Variations:
- For a creamier texture, chill the mixture overnight before rolling.
- Add a tropical twist by mixing in finely chopped dried pineapple or mango into the coconut mixture.
- Serve as a bite-sized treat at parties, or enjoy as a sweet snack anytime.
