Chocolate Peanut Butter Snowballs with Caramel Drizzle
Ingredients
- 1 cup creamy peanut butter (not natural style)
- 2 tablespoons melted butter
- 1 ½ to 2 cups powdered sugar, sifted
- 1 teaspoon vanilla extract (optional, for extra flavor)
- 1 cup semisweet or milk chocolate chips (for coating)
- 1 teaspoon coconut oil or vegetable oil (to thin the chocolate, optional)
- Caramel sauce (store-bought or homemade, for drizzle)
- Sprinkles or crushed peanuts (optional, for garnish)
Instructions
- Make the Peanut Butter Mixture
- In a medium bowl, combine the peanut butter, melted butter, and vanilla extract (if using).
- Gradually add 1 ½ cups of sifted powdered sugar, mixing well. Add the remaining powdered sugar if needed to reach a firm, moldable dough consistency.
- Form the Snowballs
- Scoop small portions of the peanut butter mixture and roll them into 1-inch balls.
- Place the balls on a parchment-lined baking sheet. Chill in the refrigerator for at least 30 minutes to firm up.
- Prepare the Chocolate Coating
- In a microwave-safe bowl, melt the chocolate chips with the coconut oil (if using) in 20–30 second intervals, stirring between each interval until smooth.
- Dip the Snowballs
- Using a fork or toothpick, dip each peanut butter ball into the melted chocolate, making sure it is fully coated.
- Return the coated snowballs to the parchment-lined baking sheet. Let the chocolate set by chilling in the refrigerator for 15–20 minutes.
- Drizzle with Caramel
- Once the chocolate has set, drizzle caramel sauce over each snowball.
- Optional: Sprinkle crushed peanuts or festive sprinkles on top for extra decoration.
