Banana Bread Cake with Cream Cheese Frosting – Ultra-Moist, Sweet, and Lusciously Creamy
Ingredients
For the Cake:
- 2 cups mashed ripe bananas (about 4 bananas)
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup sour cream or Greek yogurt
For the Cream Cheese Frosting:
- 8 oz cream cheese, softened
- ¼ cup butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a separate bowl, cream the butter and sugar until light and fluffy. Beat in the eggs, vanilla, mashed bananas, and sour cream until smooth.
- Slowly fold the dry ingredients into the wet mixture, mixing just until combined.
- Pour the batter into the prepared pan and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely.
- To make the frosting, beat the cream cheese and butter until smooth, then add the powdered sugar and vanilla and mix until creamy and fluffy.
- Spread the frosting evenly over the cooled cake. Chill briefly before slicing and serving.
