Crispy Buffalo Chicken Salad

This chicken salad is bold, crunchy, and full of flavor. Tender chicken fillets are coated in crispy rice crumbs, tossed in spicy buffalo sauce, and served over a fresh, colorful salad. It’s perfect for a quick lunch or a satisfying light dinner.

Ingredients

 

 

 

For the chicken:

  • 3 chicken fillets
  • 100 g rice crumbs (or crushed rice crackers)
  • 100 ml buffalo sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and black pepper, to taste
  • 1 egg (for coating)
  • 2 tablespoons flour
  • Oil for frying or baking

For the salad:

  • 1 cup lettuce, chopped
  • ½ cup cherry tomatoes, halved
  • ½ cucumber, sliced
  • ¼ red onion, thinly sliced
  • ½ cup sweet corn (optional)

For the dressing (optional):

  • 3 tablespoons mayonnaise or yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • Salt and pepper, to taste

Instructions

  1. Prepare the chicken
    Cut the chicken fillets into strips. Season with garlic powder, paprika, salt, and black pepper.
  2. Coat the chicken
    Dip each piece first in flour, then in beaten egg, and finally coat well with the rice crumbs.
  3. Cook the chicken
    • Fry in hot oil until golden and crispy, or
    • Bake at 200°C (390°F) for 20–25 minutes, flipping halfway.
  4. Add the buffalo sauce
    While the chicken is still hot, toss it gently with the buffalo sauce until evenly coated.
  5. Prepare the salad
    In a large bowl, combine lettuce, tomatoes, cucumber, onion, and corn.
  6. Make the dressing
    Mix mayonnaise (or yogurt), lemon juice, honey, salt, and pepper until smooth.
  7. Assemble
    Top the salad with the buffalo chicken and drizzle with dressing. Serve immediately.
