Mediterranean Baked Fish Delight
A light, healthy, and flavorful dish inspired by classic Mediterranean cuisine. Perfect for a quick weeknight dinner or a simple family meal.

Ingredients
- 2 white fish fillets (cod, halibut, or tilapia)
- 2 tablespoons olive oil
- 1 lemon (juice and zest)
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- ½ teaspoon paprika
- Salt and black pepper, to taste
- ½ cup cherry tomatoes, halved
- ¼ cup sliced olives (black or green)
- 1 tablespoon capers (optional)
- Fresh parsley or dill, chopped (for garnish)
Instructions
- Preheat the oven
Preheat your oven to 200°C (400°F). Lightly grease a baking dish with olive oil. - Prepare the marinade
In a small bowl, mix olive oil, lemon juice, lemon zest, minced garlic, oregano, paprika, salt, and pepper. - Season the fish
Place the fish fillets in the baking dish. Pour the marinade evenly over the fish, making sure both sides are well coated. - Add Mediterranean toppings
Scatter cherry tomatoes, olives, and capers around and over the fish. - Bake
Bake uncovered for 15–20 minutes, or until the fish is opaque and flakes easily with a fork. - Garnish and serve
Remove from the oven and sprinkle with fresh parsley or dill. Serve warm with rice, roasted vegetables, or crusty bread.
Tip
For extra flavor, add a few slices of lemon on top of the fish before baking.
