Mediterranean Baked Fish Delight

A light, healthy, and flavorful dish inspired by classic Mediterranean cuisine. Perfect for a quick weeknight dinner or a simple family meal.

Ingredients

  • 2 white fish fillets (cod, halibut, or tilapia)
  • 2 tablespoons olive oil
  • 1 lemon (juice and zest)
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon paprika
  • Salt and black pepper, to taste
  • ½ cup cherry tomatoes, halved
  • ¼ cup sliced olives (black or green)
  • 1 tablespoon capers (optional)
  • Fresh parsley or dill, chopped (for garnish)

Instructions

  1. Preheat the oven
    Preheat your oven to 200°C (400°F). Lightly grease a baking dish with olive oil.
  2. Prepare the marinade
    In a small bowl, mix olive oil, lemon juice, lemon zest, minced garlic, oregano, paprika, salt, and pepper.
  3. Season the fish
    Place the fish fillets in the baking dish. Pour the marinade evenly over the fish, making sure both sides are well coated.
  4. Add Mediterranean toppings
    Scatter cherry tomatoes, olives, and capers around and over the fish.
  5. Bake
    Bake uncovered for 15–20 minutes, or until the fish is opaque and flakes easily with a fork.
  6. Garnish and serve
    Remove from the oven and sprinkle with fresh parsley or dill. Serve warm with rice, roasted vegetables, or crusty bread.

 

 

 

Tip

For extra flavor, add a few slices of lemon on top of the fish before baking.
