Nova Scotia Blueberry Cream Cake
Inspired by the famous blueberry fields of Nova Scotia, this cake is soft, light, and filled with fresh blueberries, then finished with a smooth, creamy frosting. Perfect for summer gatherings or a cozy dessert at home.
Ingredients
For the Cake
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs (room temperature)
- 1 teaspoon vanilla extract
- 1 cup milk (room temperature)
- 1½ cups fresh or frozen blueberries
- 1 tablespoon flour (for coating blueberries)
For the Cream Frosting
- 1 cup heavy whipping cream (cold)
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 4 oz cream cheese, softened (optional but recommended for stability)
For Garnish (Optional)
- Fresh blueberries
- Lemon zest
- Light dusting of powdered sugar
Instructions
1. Prepare the Cake
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9-inch round cake pan or line it with parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
2. Make the Batter
- In a large bowl, beat the butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Mix in the vanilla extract.
- Add the dry ingredients alternately with the milk, beginning and ending with the dry ingredients. Mix just until combined.
3. Add Blueberries
- Toss blueberries with 1 tablespoon flour (this helps prevent sinking).
- Gently fold the blueberries into the batter.
4. Bake
- Pour batter into the prepared pan and smooth the top.
- Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool completely before frosting.
5. Make the Cream Frosting
- Beat cream cheese (if using) until smooth.
- Add powdered sugar and vanilla; mix well.
- Slowly add cold whipping cream and beat until soft, fluffy peaks form.
6. Assemble
- Spread the cream frosting evenly over the cooled cake.
- Garnish with fresh blueberries, lemon zest, or a light dusting of powdered sugar.
Serving Tips
- Chill for 30 minutes before serving for best texture
- Serve with tea, coffee, or fresh fruit
- Store in the refrigerator for up to 3 days
