No-Bake Grinch Pie
Creamy, festive, and perfect for the holidays—no oven needed!
Ingredients
Crust
1½ cups crushed graham crackers
6 tablespoons butter, melted
2 tablespoons sugar
Filling
1 package (8 oz) cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
1½ cups cold heavy whipping cream
1 box (3.4 oz) instant vanilla pudding mix
1¼ cups cold milk
3–5 drops green food coloring (adjust to color preference)
Topping
Red heart sprinkles
Instructions
1️⃣ Make the Crust
In a medium bowl, mix crushed graham crackers, melted butter, and sugar until evenly combined.
Press the mixture firmly into the bottom and slightly up the sides of a 9-inch pie dish.
Place in the refrigerator to chill while you prepare the filling (about 15 minutes).
2️⃣ Prepare the Cream Cheese Layer
In a large bowl, beat the softened cream cheese until smooth and creamy.
Add powdered sugar and vanilla extract. Beat until fully combined and fluffy.
3️⃣ Whip the Cream
In a separate bowl, whip the cold heavy cream with a hand or stand mixer until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture until smooth and airy.
4️⃣ Make the Pudding
In another bowl, whisk together the instant vanilla pudding mix and cold milk for about 2 minutes, until thickened.
Add green food coloring, a few drops at a time, until you get a bright Grinch-green color.
5️⃣ Combine the Filling
Fold the green pudding mixture gently into the cream cheese-whipped cream mixture until fully blended and evenly colored.
6️⃣ Assemble the Pie
Spoon the filling into the chilled crust.
Smooth the top with a spatula.
7️⃣ Chill
Refrigerate for at least 4 hours, or overnight for best texture.
8️⃣ Decorate & Serve
Just before serving, sprinkle red heart sprinkles over the top to give it that classic Grinch look.
