Homemade Mexican Pizza
Crispy tortillas layered with seasoned beef, beans, sauce, and melty cheese—an easy, family-friendly favorite!
Ingredients
1 pound ground beef
1 packet taco seasoning
¾ cup water
1 (15 oz) can refried beans
1 (10 oz) can enchilada sauce
¼ cup diced tomatoes
1½ cups shredded Colby Jack cheese
8 taco-sized flour tortillas
1 tablespoon vegetable oil
Instructions
1️⃣ Cook the Beef
In a large skillet over medium heat, cook the ground beef until browned, breaking it up as it cooks.
Drain excess grease if needed.
Add the taco seasoning and ¾ cup water.
Simmer for 5–7 minutes, stirring occasionally, until thickened. Remove from heat.
2️⃣ Prepare the Beans
Warm the refried beans in a small saucepan over low heat or in the microwave until spreadable.
3️⃣ Crisp the Tortillas
Heat the vegetable oil in a skillet over medium heat.
Fry each tortilla for about 30–45 seconds per side until lightly golden and crispy.
Drain on paper towels.
(You can also brush tortillas lightly with oil and bake at 400°F / 200°C for 6–8 minutes, flipping once.)
4️⃣ Assemble the Pizzas
Preheat oven to 400°F (200°C).
Place 4 crispy tortillas on a baking sheet.
Spread a thin layer of refried beans on each.
Spoon seasoned beef evenly over the beans.
Drizzle enchilada sauce over the beef.
Sprinkle diced tomatoes on top.
Add shredded cheese generously.
Place a second tortilla on top of each stack and add a little more cheese on top if desired.
5️⃣ Bake
Bake for 10–12 minutes, or until cheese is fully melted and bubbly.
6️⃣ Serve
Let cool for 2–3 minutes, then slice into wedges like a pizza.
