Loaded Ground Beef and Potatoes Skillet

Ingredients
1 lb (450 g) lean ground beef
20 small red or gold potatoes, thinly sliced
1 cup shredded cheddar cheese
1 small onion, diced
2 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon Italian seasoning (or dried thyme)
½ teaspoon salt (or to taste)
½ teaspoon black pepper
½ cup beef broth or water
Optional toppings: sour cream, chopped green onions, parsley, or crispy bacon bits
Instructions
1️⃣ Cook the Ground Beef
Heat 1 tablespoon olive oil in a large skillet over medium heat.
Add ground beef and cook until browned, breaking it up as it cooks (6–8 minutes).
Season with salt and pepper.
Remove beef from skillet and set aside.
2️⃣ Cook the Potatoes
Add remaining 1 tablespoon olive oil to the same skillet.
Add sliced potatoes and onion; season with paprika, Italian seasoning, salt, and pepper.
Pour in beef broth.
Cover and cook for 12–15 minutes, stirring occasionally, until potatoes are tender.
3️⃣ Combine & Load
Return cooked ground beef to the skillet.
Add garlic and stir for 30 seconds until fragrant.
Spread mixture evenly and sprinkle cheddar cheese over the top.
4️⃣ Melt the Cheese
Cover skillet and cook on low for 3–5 minutes, until cheese is fully melted and bubbly.
5️⃣ Serve
Remove from heat and garnish with your favorite toppings
Serve hot straight from the skillet
Tips & Variations
Swap cheddar for Monterey Jack, Colby-Jack, or pepper jack
Add bell peppers, mushrooms, or corn for extra veggies
Make it spicy with chili flakes or jalapeños
Storage
Store leftovers in an airtight container for up to 3 days
Reheat in a skillet or microwave until warmed through
