AMISH SNOW DAY BAKED CUSTARD

Old-Fashioned • Creamy • Gentle & Comforting

INGREDIENTS

Custard Base:

4 large eggs, room temperature

2 cups whole milk (do NOT use skim)

⅓ cup maple syrup

(or ⅓ cup granulated sugar or brown sugar)

1 teaspoon pure vanilla extract

1 small pinch of salt

Optional Flavor Add-Ins (Choose One or More):

¼ teaspoon ground nutmeg (classic Amish style)

¼ teaspoon ground cinnamon

½ teaspoon orange or lemon zest

1 tablespoon melted butter (extra richness)

EQUIPMENT NEEDED

4–6 ramekins or oven-safe custard cups

1 large baking dish (for water bath)

Whisk

Mixing bowl

Kettle or pot of hot water

STEP-BY-STEP INSTRUCTIONS

1️⃣ Preheat Oven

Preheat oven to 325°F (160°C)

Place ramekins into a deep baking dish.

2️⃣ Whisk the Eggs

In a mixing bowl, crack eggs.

Whisk gently until smooth and slightly pale.  Do not whip air into the eggs—custard should be silky, not foamy.

3️⃣ Add Milk & Sweetener

Slowly pour in milk while whisking.

Add maple syrup (or sugar), vanilla extract, and salt.

Mix until fully combined and smooth.

4️⃣ Fill Ramekins

Pour custard mixture evenly into ramekins.

Sprinkle nutmeg or cinnamon lightly on top if desired.

5️⃣ Create the Water Bath (Very Important!)

Carefully pour hot (not boiling) water into the baking dish.

Water should reach halfway up the sides of the ramekins.  This prevents cracking and keeps the custard creamy.

6️⃣ Bake

Transfer dish carefully to oven.

Bake for 45–50 minutes.

✔ Custard is done when:

Edges are set

Center jiggles slightly like jelly

Knife inserted near center comes out mostly clean

7️⃣ Cool & Serve

Remove ramekins from water bath.

Let cool 10–15 minutes.

Serve:

Warm

Room temperature

Or chilled (refrigerate 2–4 hours)

Drizzle with warm maple syrup

Add fresh berries

Serve with shortbread or biscuits

Dust with powdered sugar

VARIATIONS

Extra-Rich Amish Custard

Replace ½ cup milk with heavy cream

Apple Spice Custard

Add ½ teaspoon cinnamon + tiny pinch cloves

Serve with warm apples

Chocolate Version

Whisk in 2 tablespoons cocoa powder

Increase sweetener by 1 tablespoon

Dairy-Free Option

Use full-fat coconut milk

Sweeten with maple syrup
