Mini Zucchini Cheese Tarts

 

A bite-sized delight with a golden crunch and creamy veggie heart!

 

 

 

 

Ingredients (makes 6 tarts):

 

–  1 small zucchini (diced)

–  1/2 cup grated cheese (cheddar or parmesan)

–  1 egg

–  2 tbsp cream

–  Pinch of salt & pepper

–  Ready-made tart shells

 

 

 

Quick Steps:

 

1. *Sauté* zucchini in a pan with a dash of olive oil until tender.

2. *Mix* cheese, egg, cream, salt, and pepper in a bowl.

3. *Combine* with zucchini and spoon into tart shells.

4. *Bake* at 180°C (350°F) for 15–20 mins until golden.

5. *Garnish* with fresh parsley  and serve warm!
