Banana Layer

1–2 ripe bananas (yellow with small brown spots)

1 tsp butter (optional, for richness)

1 tsp brown sugar (optional, for pre-caramelizing)

Brûlée Topping

4–6 tsp brown sugar or superfine sugar

(1 tsp per ramekin)

Baking dish (for water bath)

Kettle or hot water

Step-by-Step Instructions

1️⃣ Prepare the Oven & Water Bath

Preheat oven to 150°C (300°F)

Place ramekins in a deep baking dish

Boil water and keep it hot (you’ll need it later)

2️⃣ Make the Custard Base

In a bowl, whisk egg yolks + sugar + salt

Whisk gently until pale and creamy (don’t add air)

Set aside

3️⃣ Heat the Cream

In a saucepan, heat the cream over medium-low heat

Add vanilla extract

Heat until steaming but NOT boiling

Slowly pour ⅓ of the hot cream into the yolks

Whisk constantly

Pour the mixture back into the saucepan

Slice bananas thin

Pour custard over bananas

Place baking dish in oven

Water should reach halfway up ramekins

Remove ramekins from water bath

Cool at room temperature 30 min
