Slow Cooker 3-Ingredient Lime Soda Cake

Ingredients
1 box (15.25 ounces) white cake mix
1 can (12 ounces) lemon-lime soda (such as Sprite or 7UP), room temperature
2 cups frozen whipped topping (such as Cool Whip), thawed
Optional for serving:
Fresh lime zest
Extra whipped topping
Sliced strawberries or vanilla ice cream
Directions
1️⃣ Prepare the Slow Cooker
Lightly grease the inside of a 5- to 6-quart slow cooker with butter or nonstick cooking spray.
This helps the cake release easily and encourages a light golden crust around the edges.
2️⃣ Make the Batter
In a large mixing bowl, pour in the dry white cake mix.
Slowly add the lemon-lime soda.
Stir gently with a spatula or wooden spoon just until the batter is smooth and no dry pockets remain.
The batter will be pale and slightly bubbly from the soda.
3️⃣ Cook the Cake
Pour the batter into the prepared slow cooker.
Smooth the top so it cooks evenly.
Cover the slow cooker with its lid.
Optional: place a clean kitchen towel under the lid to prevent excess condensation from dripping onto the cake.
Cook on LOW for 2–3 hours until the cake is set and a toothpick inserted in the center comes out clean.
Avoid opening the lid too often to prevent heat loss.
4️⃣ Add the Topping
Once the cake is done, gently fold in 2 cups thawed whipped topping while the cake is still warm, or spread it on top to melt slightly.
Garnish with fresh lime zest and extra whipped topping if desired.
5️⃣ Serve
Spoon the cake warm straight from the slow cooker into small bowls.
Optional: top with strawberries or a scoop of vanilla ice cream.
Pairs perfectly with coffee, milk, or a cold summer beverage.
For potlucks, set the slow cooker to “warm” and let guests serve themselves.

Use soda at room temperature for even mixing.
