1½ pounds russet or Yukon Gold potatoes, peeled and cut into ½-inch cubes
1 large yellow onion, diced
1 pound hot dogs (about 8), sliced into ½-inch rounds
Instructions
1. Prepare the slow cooker
Lightly grease the inside of a 4- to 6-quart slow cooker with a little oil or non-stick spray. This helps prevent sticking and allows the potatoes to brown slightly along the edges.
2. Add the potatoes
Spread the diced potatoes evenly across the bottom of the slow cooker. Keeping them in the bottom layer helps them cook evenly and develop lightly browned edges.
3. Add the onions
Scatter the diced onion over the potatoes in an even layer. As they cook, the onions soften and release moisture that helps flavor the potatoes.
4. Add the hot dogs
Place the sliced hot dog rounds on top. Try to keep them mostly in one layer so the edges can brown slightly during cooking.
5. Cook the hash
Cover with the lid and cook:

LOW: 6–7 hours
