Ingredients
1/2 pound spaghetti noodles
1 pound ground beef
1/2 cup yellow onion, diced
1 bell pepper, diced
3 cloves garlic, minced
1 (10-ounce) can Rotel diced tomatoes with green chilies, undrained
1 (10.5-ounce) can cream of mushroom soup
1 (8-ounce) package cream cheese, softened
1/2 cup sour cream
1 teaspoon Italian seasoning
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups shredded cheddar cheese, divided
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley (optional)
Instructions
Cook the spaghetti Bring a large pot of salted water to a boil. Cook the spaghetti according to package directions until al dente. Drain and set aside.
Prepare the meat mixture In a large skillet over medium heat, cook the ground beef until browned, breaking it up as it cooks. Drain excess grease if needed.
Add the vegetables Stir in the diced onion and bell pepper. Cook for 4–5 minutes until softened. Add the garlic and cook for another 30 seconds until fragrant.
Make the sauce Add the Rotel tomatoes, cream of mushroom soup, cream cheese, and sour cream. Stir until the cream cheese melts and the mixture becomes smooth and creamy.
Season and combine Stir in the Italian seasoning, paprika, salt, and black pepper. Add 1 cup of shredded cheddar cheese and the Parmesan cheese, stirring until melted.
Mix with pasta Fold the cooked spaghetti into the sauce, tossing until evenly coated.
Bake Transfer the mixture to a greased 9×13-inch baking dish. Sprinkle the remaining 1 cup cheddar cheese over the top.
Finish cooking Bake at 350°F (175°C) for 20–25 minutes, until bubbly and golden.
