Gooey Butter Christmas Cookies

Soft, chewy, buttery, and dusted with snowy powdered sugar — these cookies are a Christmas favorite! They’re made with cake mix, so they come together in minutes and taste like they came from a bakery.

Ingredients

  • 1 box (15.25 oz) yellow or vanilla cake mix
  • 8 oz cream cheese, softened
  • ½ cup (1 stick) unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for rolling)
  • Optional: holiday sprinkles or colored sugar for decoration

Instructions

  1. Preheat the Oven
    Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the Butter and Cream Cheese
    In a large mixing bowl, beat together the softened butter and cream cheese until smooth and creamy.
  3. Add the Egg and Vanilla
    Mix in the egg and vanilla extract until fully incorporated.
  4. Add the Cake Mix
    Add the cake mix gradually, mixing until a thick, sticky dough forms.
  5. Chill the Dough
    Cover the bowl and refrigerate for 30–60 minutes. This makes it easier to roll the dough into balls.
  6. Shape and Roll
    Scoop out tablespoon-sized portions of dough and roll into balls. Then roll each ball generously in powdered sugar (or festive sprinkles for a Christmas touch!).
  7. Bake
    Place the cookie balls 2 inches apart on the prepared baking sheet.
    Bake for 10–12 minutes, until the edges are set but the centers are still soft.
  8. Cool
    Let cookies cool on the pan for a few minutes before transferring to a wire rack.

Tips & Variations

  •  Use red and green sprinkles for a festive look.
  • Try different cake mixes: red velvet, chocolate, or funfetti!
  •  Store in an airtight container at room temperature for up to 5 days or freeze for up to 3 months.
