Gooey Butter Christmas Cookies

Gooey Butter Christmas Cookies
Soft, chewy, buttery, and dusted with snowy powdered sugar — these cookies are a Christmas favorite! They’re made with cake mix, so they come together in minutes and taste like they came from a bakery.
Ingredients
- 1 box (15.25 oz) yellow or vanilla cake mix
- 8 oz cream cheese, softened
- ½ cup (1 stick) unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup powdered sugar (for rolling)
- Optional: holiday sprinkles or colored sugar for decoration
Instructions
- Preheat the Oven
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. - Cream the Butter and Cream Cheese
In a large mixing bowl, beat together the softened butter and cream cheese until smooth and creamy. - Add the Egg and Vanilla
Mix in the egg and vanilla extract until fully incorporated. - Add the Cake Mix
Add the cake mix gradually, mixing until a thick, sticky dough forms. - Chill the Dough
Cover the bowl and refrigerate for 30–60 minutes. This makes it easier to roll the dough into balls. - Shape and Roll
Scoop out tablespoon-sized portions of dough and roll into balls. Then roll each ball generously in powdered sugar (or festive sprinkles for a Christmas touch!). - Bake
Place the cookie balls 2 inches apart on the prepared baking sheet.
Bake for 10–12 minutes, until the edges are set but the centers are still soft. - Cool
Let cookies cool on the pan for a few minutes before transferring to a wire rack.
Tips & Variations
- Use red and green sprinkles for a festive look.
- Try different cake mixes: red velvet, chocolate, or funfetti!
- Store in an airtight container at room temperature for up to 5 days or freeze for up to 3 months.
