 Almond Cookies — A True Delight!

 

 

Ingredients:

  • 2 eggs, at room temperature (reserve one egg white for coating)
  • 50–80 g sugar (adjust to taste)
  • 5 ml vanilla extract
  • 5 g baking powder
  • 225 g almond flour (or finely ground almonds)
  • 25 g grated or finely chopped almonds

Instructions:

  1. Preheat the oven to 160°C (320°F) and line a baking sheet with parchment paper.
  2. Prepare the dough:
    In a large bowl, whisk together the eggs, sugar, and vanilla extract. Add the almond flour and baking powder, then mix until a soft dough forms.
  3. Shape the cookies:
    Scoop small portions of dough with a spoon and roll each into a ball.
  4. Coat the cookies:
    Dip each ball first in the reserved egg white, then roll in the grated almonds. Arrange them on the baking sheet, leaving about 3–4 cm (1–1.5 inches) between each cookie.
  5. Bake:
    Bake for 16–18 minutes, or until lightly golden.

 

 

  1. Cool and enjoy:
    The cookies will be soft when they come out of the oven—let them cool completely to firm up before enjoying.

Store in an airtight container; they’ll stay delicious for several weeks!
