Almond Cookies — A True Delight!
Ingredients:
- 2 eggs, at room temperature (reserve one egg white for coating)
- 50–80 g sugar (adjust to taste)
- 5 ml vanilla extract
- 5 g baking powder
- 225 g almond flour (or finely ground almonds)
- 25 g grated or finely chopped almonds
Instructions:
- Preheat the oven to 160°C (320°F) and line a baking sheet with parchment paper.
- Prepare the dough:
In a large bowl, whisk together the eggs, sugar, and vanilla extract. Add the almond flour and baking powder, then mix until a soft dough forms. - Shape the cookies:
Scoop small portions of dough with a spoon and roll each into a ball. - Coat the cookies:
Dip each ball first in the reserved egg white, then roll in the grated almonds. Arrange them on the baking sheet, leaving about 3–4 cm (1–1.5 inches) between each cookie. - Bake:
Bake for 16–18 minutes, or until lightly golden.
- Cool and enjoy:
The cookies will be soft when they come out of the oven—let them cool completely to firm up before enjoying.
Store in an airtight container; they’ll stay delicious for several weeks!
