Apple Crepe Pouches with Warm Walnut Syrup

Serves:

4 crepe pouches

Crepe Batter (from scratch)

(You can use store-bought crepes if you prefer)

 

 

 

Ingredients:

1 cup all-purpose flour

2 large eggs

1¼ cups milk

2 tbsp melted butter (plus extra for pan)

1 tbsp sugar

½ tsp vanilla extract

Pinch of salt

Instructions:

In a bowl, whisk flour and salt.

Add eggs, milk, melted butter, sugar, and vanilla.

Whisk until smooth and thin (like heavy cream).

Let batter rest for 10 minutes.

Heat a nonstick pan over medium heat and lightly butter.

Pour about ¼ cup batter, swirl pan to spread thin.

Cook 30–45 seconds per side until lightly golden.

Stack crepes and cover to keep warm.

Apple–Walnut Filling

 

 

 

Ingredients:

2 green apples, peeled and finely diced

½ cup crushed walnuts

2 tbsp butter

2 tbsp honey or maple syrup

½ tsp cinnamon

Pinch of nutmeg (optional)

1 tbsp lemon juice

 

 

 

Instructions:

Melt butter in a skillet over medium heat.

Add diced apples and lemon juice.

Cook for 5–7 minutes until apples soften.

Stir in walnuts, cinnamon, nutmeg, and syrup.

Cook 1–2 more minutes until fragrant.

Remove from heat and let cool slightly.

Warm Walnut Syrup

Ingredients:

¼ cup maple syrup or honey

2 tbsp finely chopped walnuts

¼ tsp cinnamon

1 tbsp butter

Instructions:

Combine all ingredients in a small saucepan.

Warm gently over low heat for 3–4 minutes.

Stir until glossy and aromatic.

Keep warm until serving.

Assemble the Crepe Pouches

 

 

Ingredients:

Prepared crepes

Apple-walnut filling

Chives or edible kitchen string

Fresh mint leaves

Instructions:

Lay one crepe flat on a plate.

Spoon filling into the center.

Gather edges upward to form a pouch.

Tie gently with chive or edible string.

Drizzle warm walnut syrup over the top.

Garnish with mint and extra crushed walnuts.
