Banana Bread Cake with Cream Cheese Frosting – Ultra-Moist, Sweet, and Lusciously Creamy

 

 

Ingredients

For the Cake:

  • 2 cups mashed ripe bananas (about 4 bananas)
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream or Greek yogurt

 

 

 

For the Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • ¼ cup butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

 

 

 

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a separate bowl, cream the butter and sugar until light and fluffy. Beat in the eggs, vanilla, mashed bananas, and sour cream until smooth.
  4. Slowly fold the dry ingredients into the wet mixture, mixing just until combined.
  5. Pour the batter into the prepared pan and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely.
  6. To make the frosting, beat the cream cheese and butter until smooth, then add the powdered sugar and vanilla and mix until creamy and fluffy.
  7. Spread the frosting evenly over the cooled cake. Chill briefly before slicing and serving.
