Banana Pudding Cookies

INGREDIENTS
Cookie Dough Base
1 cup (226 g) unsalted butter, softened
¾ cup granulated sugar
¾ cup light brown sugar, packed
2 large eggs, room temperature
1 teaspoon vanilla extract
Dry Ingredients
2½ cups all-purpose flour
1 (3.4 oz / 96 g) box instant banana pudding mix (dry, do NOT prepare)
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
Mix-Ins (Optional but AMAZING)
1 cup white chocolate chips
½ cup crushed vanilla wafers (Nilla Wafers)
½ cup chopped walnuts or pecans (optional)
INSTRUCTIONS
1️⃣ Preheat & Prep
Preheat oven to 350°F (175°C)
Line baking sheets with parchment paper.
2️⃣ Cream Butter & Sugars
In a large bowl:
Beat butter, granulated sugar, and brown sugar until light and fluffy (2–3 minutes).
3️⃣ Add Eggs & Vanilla
Beat in eggs one at a time.
Mix in vanilla extract until smooth.
4️⃣ Combine Dry Ingredients
In a separate bowl, whisk together:
Flour
Dry banana pudding mix
Baking soda
Baking powder
Salt
5️⃣ Make the Dough
Gradually mix dry ingredients into wet ingredients.
Mix just until combined (don’t overmix).
6️⃣ Fold in the Good Stuff
Gently fold in:
White chocolate chips
Crushed vanilla wafers
Nuts (if using)
The dough will be soft and thick—that’s perfect.
7️⃣ Scoop & Bake
Scoop 1½–2 tablespoons of dough per cookie.
Place 2 inches apart on baking sheet.
Bake at 350°F (175°C) for 10–12 minutes
✔️ Edges set, centers slightly soft.
8️⃣ Cool
Let cookies rest on baking sheet 5 minutes, then transfer to a rack.
They firm up while staying soft inside.
