Best Soft Christmas Cookies

Ingredients (Soft Cookie Dough)

  • 2¾ cups (340g) all-purpose flour
  • 1 cup (225g) softened unsalted butter
  • 1 cup (200g) granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 2 teaspoons vanilla extract
  • 2 tablespoons (16g) cornstarch
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 2 tablespoons (30ml) milk

Ingredients (Optional Simple Christmas Icing)

  • 1½ cups (180g) powdered sugar
  • 2–3 tablespoons milk or water
  • ½ teaspoon vanilla extract
  • Food coloring (red, green, white)

Instructions

Cream the butter and sugar together until light and fluffy. Add the egg and egg yolk, then blend in the vanilla. Gently fold in the flour, cornstarch, baking powder, and salt to create a soft dough. Add the milk to keep the dough tender. Chill the dough for 20–30 minutes to help the cookies maintain their shape during baking.

Scoop or roll the dough into balls and lightly flatten them for extra-soft cookies. Bake at 175°C until the edges are set but still pale—this ensures they stay soft as they cool.

For the icing, whisk the powdered sugar with milk and vanilla, then tint with festive colors. Decorate the cookies once they have fully cooled.

These cookies turn out soft, buttery, and thick—perfect for Christmas gift boxes or holiday platters.
