Caramelized Garlic Mushrooms with Feta, Walnuts & Spicy Honey Drizzle

Ingredients:

  • 1 lb (450 g) mushrooms (cremini or button), cleaned and halved
  • 3 tbsp (45 ml) olive oil
  • 3 tbsp (45 g) butter
  • 4 garlic cloves, minced
  • Salt and black pepper, to taste
  • ½ tsp dried thyme or a few fresh thyme leaves
  • ½ cup (75 g) crumbled feta cheese
  • ⅓ cup (40 g) walnuts, toasted and roughly chopped
  • 3 tbsp (45 ml) hot honey
  • Optional: chili flakes for added heat
  • Fresh parsley or thyme, for garnish

 

 

 

Instructions:

  1. In a large skillet, heat the olive oil and butter over medium-high heat.
  2. Add the mushrooms in a single layer and cook undisturbed for 4–5 minutes, until they turn golden brown.
  3. Stir the mushrooms and continue cooking for another 5–7 minutes, allowing them to caramelize.
  4. Add the minced garlic, thyme, salt, and pepper, cooking for 30–45 seconds until fragrant.
  5. Transfer the mushrooms to a serving plate.
  6. Top with crumbled feta and toasted walnuts.
  7. Drizzle generously with hot honey, and finish with chili flakes and fresh herbs if desired.
  8. Serve warm as an appetizer, side dish, or on toast.
