Caramelized Garlic Mushrooms with Feta, Walnuts & Spicy Honey Drizzle
Ingredients:
- 1 lb (450 g) mushrooms (cremini or button), cleaned and halved
- 3 tbsp (45 ml) olive oil
- 3 tbsp (45 g) butter
- 4 garlic cloves, minced
- Salt and black pepper, to taste
- ½ tsp dried thyme or a few fresh thyme leaves
- ½ cup (75 g) crumbled feta cheese
- ⅓ cup (40 g) walnuts, toasted and roughly chopped
- 3 tbsp (45 ml) hot honey
- Optional: chili flakes for added heat
- Fresh parsley or thyme, for garnish
Instructions:
- In a large skillet, heat the olive oil and butter over medium-high heat.
- Add the mushrooms in a single layer and cook undisturbed for 4–5 minutes, until they turn golden brown.
- Stir the mushrooms and continue cooking for another 5–7 minutes, allowing them to caramelize.
- Add the minced garlic, thyme, salt, and pepper, cooking for 30–45 seconds until fragrant.
- Transfer the mushrooms to a serving plate.
- Top with crumbled feta and toasted walnuts.
- Drizzle generously with hot honey, and finish with chili flakes and fresh herbs if desired.
- Serve warm as an appetizer, side dish, or on toast.
