Caramelized Sweet Potatoes with Maple Syrup, Feta, and Crunchy Walnuts
A perfect balance of sweet, savory, and nutty flavors — this dish transforms simple sweet potatoes into a warm, comforting side or a light vegetarian main. The maple syrup caramelizes beautifully in the oven, while the creamy feta and toasted walnuts add the perfect finishing touch.
Ingredients
- 2 large sweet potatoes (about 700 g), peeled and cut into cubes
- 2 tbsp (30 ml) olive oil
- 2 tbsp (30 ml) pure maple syrup
- ½ cup (75 g) crumbled feta cheese
- ¼ cup (30 g) toasted walnuts, chopped
- ½ tsp (2 g) ground cinnamon
- Salt and freshly ground black pepper, to taste
- Optional: fresh thyme or rosemary for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the cubed sweet potatoes with olive oil, maple syrup, cinnamon, salt, and pepper until evenly coated.
- Spread the mixture on a baking sheet lined with parchment paper and roast for 25–30 minutes, flipping halfway through, until the potatoes are tender, golden, and caramelized.
- Transfer to a serving plate and sprinkle with crumbled feta and toasted walnuts.
- Garnish with fresh herbs if desired, and serve warm.
