Strawberry Crunch Cheesecake Bites
Creamy cheesecake centers with a buttery cookie crust and a sweet, crunchy strawberry coating—these bite-sized treats are perfect for parties, holidays, or anytime you want a fun dessert.
Ingredients
Crust
- 1 ½ cups crushed Golden Oreos (or vanilla wafers)
- ¼ cup unsalted butter, melted
Cheesecake Filling
- 2 (8 oz) packages cream cheese, softened
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
Strawberry Crunch Topping
- 1 cup crushed Golden Oreos (or vanilla wafers)
- 1 cup freeze-dried strawberries, crushed
- 3 tablespoons unsalted butter, melted
Instructions
1. Prepare the Crust
- Line a mini muffin pan with paper liners.
- In a bowl, mix crushed cookies with melted butter.
- Press about 1 tablespoon of the mixture into each liner.
- Refrigerate while preparing the filling.
2. Make the Cheesecake Filling
- In a large bowl, beat cream cheese until smooth.
- Add sugar and vanilla extract; mix until creamy.
- In a separate bowl, whip heavy cream to stiff peaks.
- Gently fold whipped cream into the cream cheese mixture.
3. Fill & Chill
- Spoon or pipe cheesecake filling over each crust.
- Smooth the tops and refrigerate for at least 3 hours (or overnight) until firm.
4. Make the Strawberry Crunch
- In a bowl, combine crushed cookies, crushed freeze-dried strawberries, and melted butter until crumbly.
5. Coat the Bites
- Carefully remove cheesecake bites from the liners.
- Roll or sprinkle each bite generously with the strawberry crunch topping.
