Strawberry Crunch Cheesecake Bites

 

Creamy cheesecake centers with a buttery cookie crust and a sweet, crunchy strawberry coating—these bite-sized treats are perfect for parties, holidays, or anytime you want a fun dessert.

Ingredients

Crust

  • 1 ½ cups crushed Golden Oreos (or vanilla wafers)
  • ¼ cup unsalted butter, melted

Cheesecake Filling

  • 2 (8 oz) packages cream cheese, softened
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream

Strawberry Crunch Topping

  • 1 cup crushed Golden Oreos (or vanilla wafers)
  • 1 cup freeze-dried strawberries, crushed
  • 3 tablespoons unsalted butter, melted

Instructions

1. Prepare the Crust

  • Line a mini muffin pan with paper liners.
  • In a bowl, mix crushed cookies with melted butter.
  • Press about 1 tablespoon of the mixture into each liner.
  • Refrigerate while preparing the filling.

2. Make the Cheesecake Filling

  • In a large bowl, beat cream cheese until smooth.
  • Add sugar and vanilla extract; mix until creamy.
  • In a separate bowl, whip heavy cream to stiff peaks.
  • Gently fold whipped cream into the cream cheese mixture.

3. Fill & Chill

  • Spoon or pipe cheesecake filling over each crust.
  • Smooth the tops and refrigerate for at least 3 hours (or overnight) until firm.

4. Make the Strawberry Crunch

  • In a bowl, combine crushed cookies, crushed freeze-dried strawberries, and melted butter until crumbly.

5. Coat the Bites

  • Carefully remove cheesecake bites from the liners.
  • Roll or sprinkle each bite generously with the strawberry crunch topping.
