Mediterranean Baked Egg Boats

Ingredients

Base

1 small baguette or crusty roll (about 20–25 cm)

2 large eggs

1–2 tablespoons extra-virgin olive oil, divided

Salt & freshly ground black pepper, to taste

Mediterranean Toppings

2 tablespoons crumbled feta cheese

1 tablespoon chopped olives (Kalamata or green)

1 tablespoon diced tomatoes (fresh or cherry tomatoes)

1 tablespoon finely chopped red onion (optional but recommended)

½ teaspoon dried oregano or za’atar (optional, very Mediterranean)

Fresh Finish

1–2 tablespoons fresh parsley or basil, chopped

Optional: chili flakes, lemon zest, or a light lemon squeeze

 

 

 

Instructions

1️⃣ Prepare the Bread Boat

Preheat oven to 180°C (350°F).

Slice the baguette lengthwise or cut off the top to create a “boat.”

Gently hollow out some of the bread, leaving sturdy walls and base.

Brush the inside lightly with olive oil and sprinkle with a pinch of salt.

Save the bread crumbs for croutons or breadcrumbs.

2️⃣ Pre-Bake (Important!)

Place the hollowed bread on a baking tray lined with parchment.

Bake for 5 minutes to lightly crisp the inside.

Remove from oven.

3️⃣ Add the Fillings

Crack the eggs carefully into the bread cavity.

Sprinkle evenly with:

Feta cheese

Chopped olives

Diced tomatoes

Red onion (if using)

Oregano or za’atar

Season lightly with salt and pepper.

 

 

 

4️⃣ Bake to Perfection

Return to oven and bake for 12–18 minutes, depending on how you like your eggs:

12–14 min → soft yolk

15–18 min → fully set

Keep an eye on it — eggs set quickly near the end.

5️⃣ Finish & Serve

Remove from oven and drizzle with olive oil.

Sprinkle with fresh herbs.

Add chili flakes or lemon zest if desired.

Slice and serve warm.

 

 

 

Pro Tips

Use room-temperature eggs for even cooking

If yolks cook faster than whites, loosely tent with foil

For extra richness, add 1 tbsp Greek yogurt or labneh before baking

Spinach & Feta: Add sautéed spinach

Shakshuka-Style: Use spiced tomato sauce instead of fresh tomatoes

Meaty: Add cooked turkey, beef sausage, or chicken
