Chocolate Truffles with Maraschino Cherries & Coconut

A bite of paradise in every piece — these chocolate truffles blend the rich flavor of dark chocolate, the sweetness of maraschino cherries, and the tropical touch of coconut. Perfect for holidays, gifts, or simply when you crave something luxuriously sweet.

 

 

 

 Ingredients:

  • 1 cup shredded coconut
  • 1/2 cup chopped maraschino cherries (drained well)
  • 1/4 cup sweetened condensed milk
  • 1/2 teaspoon vanilla extract
  • 2 cups melted dark chocolate
  • Extra shredded coconut for coating

 Instructions:

  1. Mix the base:
    In a large mixing bowl, combine the shredded coconut, chopped maraschino cherries, sweetened condensed milk, and vanilla extract. Stir until the mixture becomes thick, sticky, and evenly blended.
  2. Shape the truffles:
    Scoop out small portions of the mixture and roll them into bite-sized balls using your hands. Place each ball on a parchment-lined baking sheet. Chill in the refrigerator for about 30 minutes to firm up.
  3. Coat with chocolate:
    Once firm, dip each coconut-cherry ball into the melted dark chocolate, turning it gently to coat it completely. Let any excess chocolate drip off.
  4. Add the finishing touch:
    Roll the freshly dipped truffles in extra shredded coconut for a beautiful snowy texture and a hint of crunch.
  5. Set and serve:
    Place the finished truffles back on the baking sheet and refrigerate until the chocolate shell hardens — usually about 20–30 minutes.

 Storage Tip:

Keep the truffles in an airtight container in the refrigerator. They’ll stay fresh and delicious for up to a week.
