Christmas Cake Mix Cookies
These festive cookies are soft, chewy, and bursting with holiday color — the perfect treat for Christmas parties or edible gifts! Using cake mix makes them incredibly quick and easy to prepare.
Ingredients:
- 1 box of white or vanilla cake mix
- 2 large eggs
- ⅓ cup vegetable oil
- 1 teaspoon vanilla extract
- Red and green sprinkles or colored sugar
- Optional: ½ cup white chocolate chips or holiday M&M’s
Instructions:
- Preheat the Oven:
Set your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it. - Prepare the Dough:
In a large mixing bowl, combine the cake mix, eggs, oil, and vanilla extract. Stir until a smooth, thick dough forms. - Add the Mix-Ins:
Fold in half of the sprinkles and, if desired, the white chocolate chips or M&M’s. - Shape the Cookies:
Scoop out tablespoon-sized portions of dough, roll them into balls, and place them about 2 inches apart on the baking sheet. - Decorate:
Gently press each ball down slightly and top with extra sprinkles for a festive touch. - Bake:
Bake for 9–11 minutes, or until the edges are just set but the centers remain soft. - Cool:
Let the cookies rest on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. - Serve or Gift:
Once cooled, enjoy these colorful cookies or package them beautifully for holiday gifting.
