Ingredients

  • 2 cans refried beans
  • 3 tablespoons water
  • 1½ cups prepared mild guacamole
  • 2 cups sour cream
  • 1 (1-oz) packet mild taco seasoning
  • 16 oz chunky mild salsa
  • 2 cups shredded lettuce
  • 2 cups pre-shredded fiesta blend cheese
  • 2.25 oz sliced black olives (drained)
  • 1 cup chopped Roma tomatoes
  • ½ cup thinly sliced green onions

Instructions

  1. Prepare the Bean Layer
    In a bowl, stir the refried beans with the water until smooth and spreadable.
    Spread evenly in the bottom of a 9×13-inch dish or large glass serving bowl.
  2. Add the Guacamole Layer
    Gently spread the guacamole evenly over the bean layer, being careful not to mix.
  3. Season the Sour Cream
    In a separate bowl, mix the sour cream with the taco seasoning until fully combined.
    Spread this mixture evenly over the guacamole.
  4. Salsa Layer
    Spoon the salsa evenly over the sour cream layer. If salsa is watery, drain slightly first.
  5. Lettuce Layer
    Sprinkle shredded lettuce evenly over the salsa.
  6. Cheese Layer
    Top with the fiesta blend cheese, spreading it evenly to cover the lettuce.
  7. Finish with Toppings
    Sprinkle black olives, chopped tomatoes, and green onions evenly over the top.

Chill & Serve

  • Refrigerate for 30 minutes if time allows for best flavor and clean layers.
  • Serve chilled with tortilla chips, corn chips, or scoops.

Tips

  • For clean layers, use a spatula and spread gently from the center outward.
  • To prevent browning, keep the guacamole layer fully covered by sour cream.
  • Best enjoyed the same day, but can be covered and refrigerated for up to 24 hours.
