Cloud Cake (Easy Blender Recipe)

Soft, airy, and melt-in-your-mouth delicious — this cake is so easy you’ll want to make it every week! Just blend, bake, and enjoy.

Ingredients:

  • 200 g (7 oz) cream cheese, softened
  • 50 g (3 tbsp) unsalted butter, softened
  • 100 ml (7 tbsp) milk
  • 4 large eggs, separated
  • 70 g (⅓ cup) granulated sugar
  • 40 g (⅓ cup) cake flour
  • 10 g (1 tbsp) cornstarch
  • 1 tsp vanilla extract

Instructions:

  1. Preheat the oven:
    Set your oven to 320°F (160°C). Line the bottom of a 7-inch (18 cm) round cake pan with parchment paper.
    (Tip: Wrap the outside of the pan with foil if you’re baking in a water bath.)

 

 

  1. Prepare the batter:
    Add the following to a blender:

    • Cream cheese
    • Butter
    • Milk
    • Egg yolks
    • Sugar
    • Cake flour
    • Cornstarch
    • Vanilla extract

    Blend until the mixture is smooth and creamy with no lumps.

  2. Whip the egg whites:
    In a separate bowl, beat the egg whites until soft peaks form.
    (You can use a hand mixer for this step.)
  3. Combine gently:
    Pour the blended batter into the whipped egg whites.
    Using a spatula, fold the mixture gently until well
