CLOUD BREAD (Low-Carb & Keto Friendly)

Cloud Bread is soft, fluffy, and pillowy with a delicate texture—perfect for sandwiches, burgers, or enjoying on its own. It’s made without flour or grains and bakes into beautiful golden “clouds.”

 

 

 

Ingredients (6–8 pieces)

3 large eggs, separated

3 tablespoons cream cheese, softened (or full-fat Greek yogurt for a non-keto version)

¼ teaspoon cream of tartar (optional but helps stabilize the egg whites)

¼ teaspoon salt

½ teaspoon garlic powder (optional, for savory)

½ teaspoon dried herbs (optional: Italian seasoning, rosemary, or thyme)

Optional Sweet Version

½ teaspoon vanilla extract

1–2 teaspoons powdered sweetener (erythritol or monk fruit)

Mixing bowls (2)

Hand mixer or stand mixer

Instructions

1️⃣ Preheat & Prepare

Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.

2️⃣ Separate Eggs

Carefully separate egg whites and yolks into two clean bowls. Make sure no yolk gets into the whites.

3️⃣ Beat Egg Whites

Add cream of tartar to the egg whites. Beat on high speed until stiff peaks form (the whites should hold their shape when you lift the mixer).

4️⃣ Mix Yolks

In the second bowl, whisk egg yolks with cream cheese and salt until smooth and lump-free. Add any optional flavorings here.

5️⃣ Fold Gently

Gently fold ⅓ of the egg whites into the yolk mixture to lighten it. Then carefully fold in the remaining whites using a spatula.

Do not overmix—keep it fluffy!

6️⃣ Shape the Clouds

Spoon the mixture onto the baking sheet into 6–8 round mounds, about 3–4 inches wide.

7️⃣ Bake

Bake for 25–30 minutes, or until tops are lightly golden and set.

8️⃣ Cool & Serve

Remove from oven and allow to cool for 5–10 minutes. The bread will firm up slightly as it cools.
