CREAMY BAKED MAC AND CHEESE

Ultra-Creamy • Cheesy • Golden on Top

Cook Time: 30–35 minutes

Serves: 6–8 people

 

 

 

INGREDIENTS

For the Pasta:

1 pound (450 g) elbow macaroni (or shells, cavatappi, penne)

1 tablespoon salt (for boiling water)

For the Cheese Sauce:

4 tablespoons unsalted butter (½ stick)

4 tablespoons all-purpose flour

3 cups (720 ml) whole milk, warm

1 cup (240 ml) heavy cream

3 cups (340 g) sharp cheddar cheese, freshly shredded

1 cup (115 g) mozzarella cheese, shredded

½ teaspoon garlic powder

½ teaspoon mustard powder (optional but recommended)

½ teaspoon paprika (optional, for warmth)

Salt, to taste

Black pepper, to taste

Optional flavor boosters:

½ cup Gruyère or Monterey Jack cheese

2 tablespoons cream cheese (extra creaminess)

For the Crispy Topping (Optional but Amazing):

1 cup (60 g) breadcrumbs or panko

2 tablespoons melted butter

¼ cup (25 g) grated Parmesan cheese

½ teaspoon garlic powder (optional)

 

 

 

INSTRUCTIONS

1️⃣ Cook the Pasta

Bring a large pot of water to a rolling boil.

Add salt, then pasta.

Cook 1 minute less than package directions (al dente).

Drain and set aside (do not rinse).

2️⃣ Make the Roux

In a large saucepan or deep skillet, melt butter over medium heat.

Add flour and whisk constantly for 1–2 minutes, until smooth and lightly golden.

This removes the raw flour taste.

3️⃣ Add Milk & Cream

Slowly pour in the warm milk, whisking continuously.

Add the heavy cream.

Continue whisking until the sauce thickens (about 4–5 minutes).

Sauce should coat the back of a spoon.

4️⃣ Add Seasonings & Cheese

Lower heat to low.

Stir in garlic powder, mustard powder, paprika, salt, and pepper.

Add cheeses gradually, stirring until fully melted and smooth.

Taste and adjust seasoning.

If sauce feels too thick, add a splash of milk.

5️⃣ Combine Pasta & Sauce

Add cooked macaroni to the cheese sauce.

Stir gently until every piece is coated.

6️⃣ Prepare the Topping

In a bowl, mix breadcrumbs, melted butter, Parmesan, and garlic powder.

Stir until crumbs are evenly coated.

7️⃣ Bake

Preheat oven to 375°F (190°C).

Transfer mac and cheese to a greased baking dish.

Sprinkle topping evenly over the top.

Bake 25–30 minutes, until bubbly and golden.

For extra browning: Broil for 2–3 minutes at the end.

VARIATIONS

Extra Creamy: Skip baking, serve straight from the stove

Spicy: Add chili flakes or a little hot sauce
