Southern Fried Potatoes and Onions

Ingredients:

  • 4 large russet potatoes, peeled and sliced into thin rounds
  • 1 large onion, thinly sliced
  • 4 tablespoons bacon grease or vegetable oil
  • Salt and black pepper, to taste
  • ½ teaspoon paprika (optional)

Instructions:

  1. Prep the potatoes:
    Rinse the sliced potatoes in cold water to remove excess starch, then pat them completely dry with paper towels. This helps them crisp up nicely in the skillet.
  2. Heat the skillet:
    In a large cast-iron skillet, heat the bacon grease or oil over medium heat until shimmering.
  3. Cook the potatoes:
    Spread the potatoes in an even layer and let them cook undisturbed for about 5 minutes, allowing a golden crust to form on the bottom.
  4. Add the onions:
    Add the sliced onions to the skillet and gently toss everything together. Continue cooking, stirring occasionally, for 15–20 minutes, or until the potatoes are tender and golden brown on the edges.
  5. Season and serve:
    Sprinkle with salt, black pepper, and paprika (if using). Taste and adjust the seasoning as needed.
