Ingredients
Enchilada Filling
2 cups cooked chicken, shredded
(rotisserie chicken works great)
1 small onion, finely diced
2 cloves garlic, minced
1 tbsp olive oil
1 (4 oz) can diced Hatch green chiles
(mild or hot — your choice)
½ tsp ground cumin (or more to taste)
½ tsp salt
¼ tsp black pepper
Sauce & Cream Layer
1 ½ cups Hatch green chile sauce
(or canned green enchilada sauce)
1 cup sour cream
Cheese & Tortillas
8 flour or corn tortillas
(flour = softer, corn = traditional)
2 cups shredded Monterey Jack cheese
1 cup shredded cheddar cheese
Instructions
1️⃣ Preheat & Prepare
Preheat oven to 375°F (190°C)
Lightly grease a 9×13-inch baking dish
2️⃣ Cook the Chicken Filling
Heat olive oil in a skillet over medium heat
Add diced onion and sauté for 3–4 minutes until soft
Add garlic and cook 30 seconds until fragrant
Stir in:
Shredded chicken
Diced green chiles
½ cup green chile sauce
Cumin, salt, and pepper
Cook 2–3 minutes, stirring well
Remove from heat
3️⃣ Make the Creamy Sauce
In a bowl, whisk together:
Sour cream
½ cup green chile sauce
Mix until smooth and creamy
4️⃣ Assemble the Enchiladas
Warm tortillas slightly so they don’t crack
Spoon chicken mixture down the center of each tortilla
Roll tightly and place seam-side down in baking dish
5️⃣ Sauce & Cheese It Up
Pour remaining green chile sauce over enchiladas
Spread sour cream mixture evenly on top
Sprinkle Monterey Jack + Cheddar cheese generously
6️⃣ Bake
Bake uncovered for 25–30 minutes
Enchiladas should be bubbly, melted, and lightly golden
