Crispy Shrimp Egg Rolls (Restaurant-Style!)

Golden, crunchy on the outside and juicy, flavorful on the inside—these shrimp egg rolls are perfect as an appetizer, snack, or party favorite!

 

 

 

Ingredients (Makes 18–20 egg rolls)

Filling

1 lb (450 g) cooked shrimp, peeled, deveined & finely chopped

1 cup shredded cabbage

½ cup shredded carrots

½ cup bean sprouts, roughly chopped

2 green onions, thinly sliced

2 cloves garlic, minced

1 tsp fresh ginger, grated (optional but recommended)

1½ tbsp soy sauce

1 tbsp oyster sauce

1 tsp sesame oil

½ tsp black pepper

¼–½ tsp red pepper flakes (optional, to taste)

For Wrapping & Frying

1 package egg roll wrappers (18–20 wrappers)

1 egg + 1 tbsp water (for sealing)

Vegetable oil for deep frying

 

 

 

Instructions

1️⃣ Prepare the Filling

Place chopped shrimp in a large bowl.

Add cabbage, carrots, bean sprouts, green onions, garlic, and ginger.

Pour in soy sauce, oyster sauce, sesame oil, black pepper, and red pepper flakes.

Mix well until evenly combined.

Let filling rest 10 minutes to absorb flavors, then gently squeeze out excess moisture (important for crispy rolls!).

2️⃣ Assemble the Egg Rolls

Lay one egg roll wrapper on a clean surface in a diamond shape.

Spoon 2–3 tablespoons of filling near the bottom corner.

Fold bottom corner over filling.

Fold in both sides snugly.

Roll tightly upward.

Brush top edge with egg wash and seal.

Repeat with remaining wrappers.

3️⃣ Fry the Egg Rolls

Heat oil to 375°F (190°C) in a deep pan or fryer.

Fry 3–4 egg rolls at a time (don’t overcrowd).

Cook 3–4 minutes, turning until golden brown and crispy.

Remove and drain on paper towels or a wire rack.

 

 

 

Serve With (Highly Recommended!)

Sweet chili sauce

Soy sauce + rice vinegar

Sweet & sour sauce

Spicy mayo (½ cup mayo + 1–2 tbsp sriracha + 1 tsp lemon juice)

Pro Tips for Perfect Egg Rolls

Dry filling = crispy egg rolls (very important!)

Keep wrappers covered with a damp towel while working.

Fry seam-side down first so they stay sealed.

Cool on a wire rack to avoid sogginess.

Variations

Shrimp & Veggie: Add mushrooms or water chestnuts

Spicy Shrimp: Add 1 tsp chili garlic sauce

Shrimp & Cheese: Add ½ cup shredded mozzarella (fusion style!)

Healthier Cooking Options

Oven-Baked

Preheat oven to 400°F (200°C)

Brush egg rolls lightly with oil

Bake 20–25 minutes, flipping halfway

Air Fryer

Spray with oil

Air fry at 375°F (190°C) for 10–12 minutes, turning once
