Introduction:
Tostadas are a popular and delicious Mexican dish that is both versatile and easy to prepare. Ingredients:

  • 8 corn tortillas (6-inch)
  • 1 tablespoon vegetable oil
  • 8.5 ounces corn, drained
  • 1 1/2 cups shredded cooked chicken
  • 8 ounces salsa
  • 2 tablespoons taco seasoning (store-bought or homemade)
  • 15 ounces black beans, drained and rinsed
  • 2 cups Colby Jack cheese, shredded
  • Fresh cilantro, for garnish
  • Tomatoes, diced, for garnish

Instructions:

  1. Preheat the Oven:
    Preheat your oven to 400°F (200°C).
  2. Prepare the Tostada Shells:
    Lightly brush both sides of the corn tortillas with vegetable oil. Arrange them on a baking sheet in a single layer. Bake for 8-10 minutes, flipping halfway through, until the tortillas are crispy and golden brown.
  3. Prepare the Chicken Mixture:
    While the tortillas are baking, heat a skillet over medium heat. Add the shredded cooked chicken, salsa, and taco seasoning. Stir the mixture together and cook for about 5 minutes, until heated through.
  4. Assemble the Tostadas:
    Once the tortilla shells are crispy, spread the drained black beans and corn evenly on top of each tostada shell. Add a generous spoonful of the seasoned chicken mixture on top, followed by a sprinkle of shredded Colby Jack cheese.
  5. Melt the Cheese:
    Return the assembled tostadas to the oven and bake for an additional 5-7 minutes, or until the cheese is fully melted and bubbly.
  6. Garnish and Serve:
    Remove from the oven and garnish with fresh cilantro and diced tomatoes before serving.
