Ingredients

For the Brownies:

1 cup (200g/7 oz) granulated sugar

1 cup (200g/7 oz) light brown sugar, packed

3 large eggs, at room temperature

¾ cup (75g/2.6 oz) unsweetened cocoa powder

1 cup (120g/4.2 oz) all-purpose flour

1 teaspoon (6g/0.2 oz) salt

1½ cups (260g/9.2 oz) dark chocolate chips

1 cup (225g/7.9 oz) unsalted butter, melted

1 tablespoon (15ml) brewed coffee

1 tablespoon (15ml) vanilla extract

Instructions

1. Preheat your oven to 350°F (175°C). Line an 8×8-inch (20×20 cm) baking pan with parchment paper.

2. In a heatproof bowl, melt the butter and dark chocolate together using a double boiler or in the microwave (30-second intervals), stirring until smooth.

3. While still warm, whisk in both sugars until fully incorporated.

4. Add the eggs and vanilla extract, mixing well until the batter is glossy.

5. Sift in the flour, cocoa powder, and salt. Gently fold until just combined—avoid overmixing.

6. Fold in chocolate chips (or nuts, if desired) for extra texture.

7. Pour the batter into the prepared pan, spreading evenly.

8. Bake for 25–30 minutes, or until the edges are firm but the center remains slightly soft.

9. Allow to cool completely before slicing into squares and serving.
